Executive Chef of the ultra-exclusive Residence Club at Ocean Reef (Key Largo, Fla.), Andrea Mallon-Griffith, formerly Executive Chef of Pursell Farms (Sylacauga, Ala.), has an immense amount of creative freedom.

Avocado Hummus

Menus change daily at the Residence Club and feature the best of whatever Mallon-Griffith can get from the 36 farms she has built relationships with since coming to Ocean Reef. She differentiates her program from the 17 other restaurants on property by being especially chef-driven. Weeknight meals are served family-style. On Friday and Saturday nights, she changes the format and runs a tasting menu.

In all cases, Mallon-Griffith puts the needs and wants of her membership first. For example, Mallon-Griffith’s Avocado Hummus features a mélange of local vegetables atop hummus made with local avocados and finished with a toasty tahini.

“It’s simple and elegant,” she says. “It’s full of fresh, local produce and represents the type of food my members want to eat. They aren’t looking for foie gras and caviar every night of the week. They want fresh, healthy foods that are beautifully prepared, lower in carbs, and delicious. This dish is also vegetarian and can be easily modified to be vegan,” she adds. “It’s a useful recipe that club chefs can modify based on what produce they have in the cooler, pick from their garden, or get from their produce suppliers.” Read More>>
